  • Rinse the garlic scapes under clean running water. Trim the brown ends, woody stalks, and dry tips. Save the trimmings in the freezer for chicken stock.
  • Preheat the grill to medium heat, about 425˚F. Clean the grates well.
  • Place the garlic scapes in a large bowl. Drizzle in the extra virgin olive oil and toss with your hands until the scapes are evenly coated with the oil.
  • Toss the prepared garlic scapes on the hot grate and grill until they are well charred. Flip and grill the opposite side.
  • Garlic scapes are finished cooking when they are crispy and slightly charred on the outside and tender on the inside, about 8 minutes.
  • Remove the garlic scapes from the grill and pile on a plate, dust with sea salt and fresh ground pepper, and serve as a side dish to any meal.
