This grilled garlic scapes recipe adds a layer of sweet smoky char to the mild garlicky flavor, and then enhances it further with a simple dusting of sea salt and freshly ground pepper.
Rinse the garlic scapes under clean running water. Trim the brown ends, woody stalks, and dry tips. Save the trimmings in the freezer for chicken stock.
Preheat the grill to medium heat, about 425˚F. Clean the grates well.
Place the garlic scapes in a large bowl. Drizzle in the extra virgin olive oil and toss with your hands until the scapes are evenly coated with the oil.
Toss the prepared garlic scapes on the hot grate and grill until they are well charred. Flip and grill the opposite side.
Garlic scapes are finished cooking when they are crispy and slightly charred on the outside and tender on the inside, about 8 minutes.
