Ingredients
  • 3 pounds tomatoes, cut in half
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoons fresh Italian parsley, chopped
  • 1 teaspoon fresh basil, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1/2 teaspoon fresh thyme, chopped
  • pinch red pepper flakes (optional)
  • salt and pepper
Instructions
  1. Preheat a skillet over medium heat.

  2. Add the olive oil to the pan. Add the onion and garlic and sauté while stirring for 2-3 minutes.

  3. Add the tomatoes, parsley, basil, oregano, thyme, red pepper flakes, salt, and pepper. Reduce the heat to low, cover the skillet, and simmer for 30 minutes. For a chunky sauce, simply keep warm until ready to use.

  4. For a Smooth Sauce: Remove the pan from the heat. Puree the sauce with a food strainer, food processor, or immersion blender. Return the sauce to the heat and keep warm until ready to use.
