Ingredients

For the Meatballs:

  • 1 small onion
  • 1/2 cup whole milk
  • 1 large egg scrambled
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 2 slices white bread crusts removed
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 tablespoon unsalted butter

  • Preheat a large skillet over medium heat.
  • Grate the onion into a large bowl using the fine holes of a box grater. Add milk, egg, salt, pepper, nutmeg, and mix to combine.
  • Remove the crusts from the bread, tear it into chunks, and add to the bowl. Mix to combine and let sit until the bread absorbs the liquid and becomes soft, about 3 minutes. Mash it with a fork until it forms a thick paste.
  • Add the ground beef and ground pork to the bowl and mix well with a fork until combined.
  • Add one tablespoon of butter into the preheated skillet. Shape the meat mixture into 1-inch sized meatballs and add to the skillet.
  • Cook meatballs about 10 minutes, turning frequently to lightly brown all sides. Remove the meatballs from the skillet, place on a plate, and set aside.
  • Reserve about 2 tablespoons of drippings in the pan and spoon out any excess. Add the flour to pan drippings in the skillet. Stir to combine and slightly brown the flour.
  • Add the beef stock and continue stirring until the mixture thickens. Add the milk, pepper, and stir to combine.
  • Return the meatballs to the skillet and stir to coat. Reduce the heat to low, cover, and let simmer for 10 minutes, or until the meatballs are cooked thoroughly.
  • Serve the Swedish meatballs with a generous spoon full of gravy. Sprinkle with parsley as a garnish to add color if desired.

Notes

Brown Gravy Variation: Replace the milk in the recipe with more beef stock if you want a brown gravy for your Swedish meatballs instead of a creamy sauce.
